起源
もともとは競走のスタート地点に引いた「線（scratch）」から始めるという表現で、「最初から始める」意味に一般化。料理では既製品を使わず材料から作る意味でも定着。
注釈
「最初から」「ゼロから」の比喩。料理では「粉や卵など材料から手作り」の意味でよく使う。会話・ビジネスともに普通で、やり直しにも新規作成にも使える。
